Preheat the oven to 200°C. Cut the cabbage through the core into 8 wedges, making sure the leaves stay together.
Thoroughly rub the cabbage wedges with 2 tablespoons of olive oil, salt, and freshly ground black pepper.
Heat a large oven-safe skillet with the remaining 2 tablespoons of olive oil, then sear the cabbage wedges cut-side down for 4–5 minutes until they develop a beautiful, deep brown crust.
Chef's tip
If you prefer an even richer flavor, feel free to complement or replace the hazelnuts with toasted walnuts or pecans.
It makes a fantastic standalone vegetarian dish served with a slice of fresh sourdough bread, but it is also divine as a unique autumn side dish for roasted meats.
