
Grilled Prawns in Citrus Marinade

Preparation method
Remove the heads of the prawns and squeeze their valuable juices into a small bowl. Peel the prawns, leaving the last tail segment. In another bowl, mix the cleaned prawns with lemon and orange juice, add two pinches of salt, mix, and let marinate for 10 minutes.
Heat the olive oil in a pan over medium heat, then add the prawns. Sauté for half a minute, then flip them. Add the finely chopped ginger, chopped chili pepper, and crushed garlic. Sauté for another half minute.
Add the juice extracted from the prawn heads to the citrus marinade in which the prawns rested.
Chef's tip
For seafood, a light, less aromatic white or rosé wine is the best choice.
