Preparation method
In a large pot, heat the sunflower oil to 180 °C for frying the potatoes, and preheat the oven to 90 °C to keep warm. Peel the potatoes, cut them into sticks, and wait until the oil reaches the appropriate temperature.
Fry the potatoes until golden brown in the hot oil. Then drain them on a baking sheet lined with paper towels, season with salt, and place them in the oven to keep warm.
Carefully pour the excess oil into a separate container, leaving about 3 tablespoons in the pan, or use a clean pan.
Chef's tip
For perfectly caramelized onions, use a lower heat and be patient, allowing the sweet flavors to develop better.
After cooking the steak, let the meat rest for 2-3 minutes before serving so that the juices can redistribute evenly.
