
Creamy Chicken with Gnocchi and Spinach

Preparation method
Preheat the oven to 200–205 °C. Prepare a small baking tray (approx. 30x20 cm) and line it with baking paper.
Peel and finely chop the red onion and garlic. Slice the mushrooms thinly. Clean the chicken breasts, then season both sides with salt and pepper. Heat 2 tablespoons of olive oil in a medium pan and cook the chicken breasts for 4-5 minutes per side until golden brown. Then transfer the meat to the baking tray and bake in the oven for 17-18 minutes.
In the same pan, heat the remaining 2 tablespoons of oil. Add the onion, garlic, mushrooms, and gnocchi, then sauté over medium heat for 7-8 minutes. Pour in the chicken broth and cooking cream, sprinkle in the oregano and thyme. Cook over medium heat for 8-9 minutes until the sauce thickens.
Chef's tip
If you want an even creamier result, use higher-fat cream.
The gnocchi does not need to be pre-cooked; it will soften perfectly in the sauce.
