Preparation and caramelization
Before grilling, remove the meat from the refrigerator and let it warm to room temperature. Peel the red onion and cut it into half-rings. Sauté it in a little sunflower oil until translucent, then add the Jack Daniel's BBQ sauce and let it caramelize over low heat.
Mix the mayonnaise with the smoked paprika and refrigerate to allow the flavors to meld.
Grilling
Lightly brush the patties with oil, season with pepper (and salt, if the meat is not already salted), then grill on a hot grill for about 4 minutes per side, so that the center remains juicy and slightly pink. Grill the bacon slices until crispy, and toast the halved buns. When the meat is done, sprinkle with grated Parmesan and let it rest for a minute.
