
Pork Leg with Beans and Tomatoes

Preparation method
Heat the olive oil in a large pot over medium heat. Add the finely chopped red onion and sauté for 5-6 minutes until translucent.
Meanwhile, wash the pork leg, pat it dry, and cut it into approximately 2x2 cm cubes.
Once the onion has softened, add the meat cubes and sear for another 5-6 minutes. Then stir in the tomato paste, paprika, grated garlic, salt, and pepper, and sauté for 1 minute. Pour in the broth and add the chopped tomatoes. Cover, reduce the heat, and cook for 40-45 minutes until the meat is tender. If necessary, replenish the liquid with a little broth.
