Preparation method
Roll out the puff pastry, or use a pre-rolled version. Beat the egg with a pinch of salt, then brush it over the entire surface of the pastry.
Carefully cut around the edges of the pastry with a knife, about 1 cm from the edge (do not cut all the way through). Sprinkle the edges with sesame seeds.
Slice the Camembert cheese and the peeled, cored pear thinly. Arrange the cheese and pear slices alternately on the inner part of the pastry. Once done, drizzle with maple syrup, then sprinkle with crushed pink peppercorns, dried cranberries, and sliced almonds.
Chef's tip
Serve the tart with a light green salad with balsamic dressing, which perfectly balances the creaminess of the cheese.
