Preparation method
In a bowl, combine the minced beef, crumbled feta cheese, finely chopped red onion, crushed garlic, tomato paste, and all the spices (cumin, paprika, cinnamon, chilli, salt, and pepper). Mix the mixture thoroughly, ideally by hand, to ensure the flavours are fully combined.
Cut the pita breads in half (or if they are thicker, cut a pocket into them), and fill them with a thin layer of the meat mixture – about 1–1.5 cm thick. A thin layer is important for the meat to cook through properly.
Lightly brush the outside of the filled pitas with olive oil so they become beautifully golden brown and crispy during cooking.
Chef's tip
Serve the Arayes with fresh Greek yogurt or a minty tahini sauce for the perfect flavour experience.
