Preparation method
Place the whole wheat pasta in boiling, salted water and cook until done. Cooking time depends on the type of pasta, usually 12–15 minutes.
Meanwhile, clean the chicken breast, cut it into cubes, and quickly sear it in 10 ml (approx. 1 tablespoon) of sunflower oil. Cook over medium heat for about 5 minutes, then remove from heat.
Prepare the spinach pesto: blend the spinach, hazelnuts, remaining sunflower oil, and Parmesan. If you want a spicier taste, add the garlic as well. Blend until smooth, then season with salt and pepper.
Chef's tip
It's worth dry-roasting the hazelnuts in a pan before use to enhance their flavor.
