Preparation method
First, prepare the dark layer. Break the dark chocolate into pieces and melt it over a bain-marie. To do this, place a heatproof bowl over a saucepan containing a small amount of simmering water (the bottom of the bowl should not touch the water), and stir continuously to melt the chocolate in 2-3 minutes. Remove from heat and let it cool for about 2 minutes.
Meanwhile, in a bowl, mix 250 g of cottage cheese with 1 tablespoon of honey. When the chocolate is no longer hot, add it to the cottage cheese while stirring continuously, and mix until you get a uniform, thick cream.
In another bowl, prepare the light layer: mix the remaining 200 g of cottage cheese, 1 tablespoon of honey, and the scraped seeds of the vanilla bean.
Chef's tip
If you have hazelnuts at home, lightly toast them and sprinkle them on top of the dessert for an extra crunchy experience.
