Make a purée from the forest fruits: let the frozen fruit thaw or warm it slightly, mix it with the fresh fruit, then purée with an immersion blender. For a smoother consistency, strain it through a sieve.
Mix the fruit purée with the condensed milk and set aside. Whip the chilled whipping cream until stiff, then gently fold it into the fruit and condensed milk base using a spatula.
If you have an ice cream maker, use it to chill the mixture. If not, pour the mixture into a sealable container and place it in the freezer. After about an hour, prepare the strawberry purée: blend the strawberries, mix in the vanilla sugar and gin. For a marbled effect, spoon islands of strawberry purée into the ice cream base and swirl with a skewer or knife.
Chef's tip
Pink gin not only enhances the flavor, but due to its alcohol content, the ice cream's texture remains creamier and is less likely to become icy.
