Preparation method
If using fresh corn, remove the husks and silks, then wash the cobs thoroughly and pat them dry.
Preheat the grill or a pan to medium heat. Grill the corn for about 10-15 minutes, turning regularly, until evenly browned and golden. Slightly charred kernels in some places will add an extra smoky flavor.
While the corn is grilling, in a bowl, mix together the mayonnaise, sour cream, lime juice, finely minced garlic, and a pinch of salt until you get a smooth cream.
Chef's tip
If you like sweet and savory combinations, drizzle a little agave syrup or honey over the finished corn for an extra flavor experience.
