Preparation method
Toast the coriander seeds in a dry pan over medium heat, stirring constantly, for about 40 seconds until fragrant. Then lightly crush them in a mortar.
Also toast the sesame seeds in a dry pan until light golden, then transfer to a plate and let them cool completely.
Cut the well-chilled beef into very small cubes, about 3 mm. It is important to use a sharp knife to avoid damaging the meat fibers.

Cut the meat just before serving and keep it cold throughout for maximum freshness.
