Preparation method
Thoroughly grease a loaf pan with butter and sprinkle with a little flour. Preheat the oven to 180°C.
Sift the flour, then mix in the whole, unpeeled almonds. Beat the egg whites until stiff peaks form, gradually adding the granulated sugar spoon by spoon until you get a shiny and stable meringue.
Gently fold the almond flour mixture into the meringue with a spatula, being careful not to break down the foam. Smooth the mixture into the prepared pan.
Chef's tip
For slicing, use a serrated knife or a very sharp plain knife so that the almonds do not break but are cut cleanly.
