Preparation method
Preheat the oven to 180 °C and prepare an approx. 25 cm × 30 cm baking dish.
Wash the chicken thighs and cut them in half at the joint. Peel the red onion and garlic, then slice them thinly. Core the bell pepper and cut it into thin strips. Place the cut thighs, onion, garlic, and pepper into the baking dish. Add the oil, chicken stock, chopped tomatoes, olives, paprika, thyme, salt, and pepper, then mix everything thoroughly.
Place the baking dish in the hot oven and bake the chicken with the vegetables for 55–60 minutes at 175–180 °C.
