
Apple-cinnamon pancakes with buckwheat and spelt flour

Preparation method
Sift the buckwheat flour and spelt flour into a large bowl. Add the eggs, milk, and a pinch of salt, then mix thoroughly. Let the dough rest for 10 minutes.
Meanwhile, prepare the apple filling: wash the apples, remove the core, and cut them into small cubes. Heat 2 tablespoons of butter in a non-stick pan, add the apple cubes, and sauté over medium heat for about 5 minutes. Then remove from heat, stir in the honey and cinnamon.
Heat another non-stick pan dry. From the rested dough, cook pancakes over medium heat (about 1 minute per side). The amount of dough is enough for approximately 10 pancakes.
Chef's tip
When serving, you can drizzle with a little Greek yogurt or sprinkle with toasted almonds for an even richer flavour experience.
