Measure the quinoa into a small saucepan, add the ground cinnamon, Dutch cocoa powder, honey, and cane sugar. Pour in 400 ml of water and start heating it over high heat.

Once the water starts to boil, reduce the heat to medium, cover the saucepan, and cook the mixture for 13–15 minutes until the quinoa is completely soft. Stir occasionally during cooking. Meanwhile, roughly chop the dark chocolate.

When the porridge is ready, remove it from the heat and stir in the chopped dark chocolate so that it melts nicely. Using an immersion blender, purée the porridge to the desired consistency.

Chef's tip

You can make the porridge even more special with a little fresh mint or extra dark chocolate shavings on top.
