Finely chop the red onion and garlic, dice the bacon, roughly chop the fresh herbs, and grate the cheese. Preheat the oven to 180 degrees Celsius.
Heat the oil in an oven-safe, stainless steel pan over medium heat. Add the onion and sauté for 1-2 minutes until translucent and soft, but not browned.
Add the garlic to the onion, stir, then add the bacon. Fry for a few minutes until the bacon softens and then lightly browns.
