- 2 tbsp Matcha powder
- 100 g Chia seeds
- 250 ml Coconut milk
- 3 tbsp Maple syrup
- 1 tsp Vanilla extract
- 100 g Fresh raspberries

Pour 350 ml of water into a bowl, add the matcha powder, and whisk thoroughly with a hand whisk until lump-free.

Stir in the coconut milk, maple syrup, vanilla extract, and chia seeds. Mix thoroughly, then refrigerate for at least 6 hours, but it's best to let it sit overnight.

Before serving, stir the swollen pudding again, divide it into glasses, and garnish with fresh raspberries on top.
Chef's tip
If you want an even creamier consistency, use thicker coconut cream instead of some of the coconut milk.
