Heat the ghee in a pan. Clean and finely chop the shallots, then sauté until golden.
Add the cleaned and finely chopped garlic and the chopped chili pepper. Sauté for a few more seconds, stirring constantly, but be careful not to burn the garlic, as it can become bitter.
Cut the peeled tomatoes into smaller pieces and add them to the pan. Sauté for 2-3 minutes, stirring occasionally.
Chef's tip
For an even more distinctive flavor, add smoked paprika or a pinch of ground cumin.
Instead of feta, you can use goat cheese or grated cheddar, but cool cottage cheese or sour cream also perfectly balances the spiciness.
A fried egg on top makes this dish even more filling.
