Preparation method
Peel the bananas and cut them into slices about 3 mm thick.
In a bowl, thoroughly mix the Greek yogurt, egg, vanilla extract, and 2 tablespoons of cold water. In another bowl, combine the flour, baking powder, and ground cinnamon. Gradually add the dry ingredients to the yogurt mixture and stir until a smooth batter forms.
Heat a little oil in a pan over medium heat. Spoon small dollops of batter to form pancakes 6–8 cm in diameter. While cooking, place 3 slices of banana on top of each pancake. When the bottoms are golden brown, carefully flip them and cook the other side until done.
