Ingredients

  • 2 ripe bananas
  • 170 g Greek yogurt
  • 100 g fine wheat flour
  • 50 ml sunflower cooking oil
  • 1 egg
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon vanilla extract
  • 150 g plain yogurt for serving
  • 2 tablespoons maple syrup
  • 1 teaspoon powdered sugar for sprinkling

    Peel the bananas and cut them into slices about 3 mm thick.

    In a bowl, thoroughly mix the Greek yogurt, egg, vanilla extract, and 2 tablespoons of cold water. In another bowl, combine the flour, baking powder, and ground cinnamon. Gradually add the dry ingredients to the yogurt mixture and stir until a smooth batter forms.

    Heat a little oil in a pan over medium heat. Spoon small dollops of batter to form pancakes 6–8 cm in diameter. While cooking, place 3 slices of banana on top of each pancake. When the bottoms are golden brown, carefully flip them and cook the other side until done.

    Serve the finished pancakes drizzled with plain yogurt and maple syrup, and sprinkle a little powdered sugar on top.
