Ingredients
- 2 ripe bananas
- 170 g Greek yogurt
- 100 g fine wheat flour
- 50 ml sunflower cooking oil
- 1 egg
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- ½ teaspoon vanilla extract
- 150 g plain yogurt for serving
- 2 tablespoons maple syrup
- 1 teaspoon powdered sugar for sprinkling
Steps
- 1Peel the bananas and cut them into slices about 3 mm thick.
- 2In a bowl, thoroughly mix the Greek yogurt, egg, vanilla extract, and 2 tablespoons of cold water. In another bowl, combine the flour, baking powder, and ground cinnamon. Gradually add the dry ingredients to the yogurt mixture and stir until a smooth batter forms.
- 3Heat a little oil in a pan over medium heat. Spoon small dollops of batter to form pancakes 6–8 cm in diameter. While cooking, place 3 slices of banana on top of each pancake. When the bottoms are golden brown, carefully flip them and cook the other side until done.
- 4Serve the finished pancakes drizzled with plain yogurt and maple syrup, and sprinkle a little powdered sugar on top.
