PREPARING THE OMELETTE
Crack the eggs into a bowl, season with salt and pepper, add a tablespoon of water, and whisk with a fork.
Melt the butter in a pan over low heat. Be careful not to let it brown. As soon as the butter starts to foam slightly, pour in the egg mixture.
Using a flat wooden spoon, pull the mixture from the edge of the pan towards the center. When the mixture no longer flows but its surface is still soft, spread the pre-prepared filling evenly over it.
Chef's tip
Cook the omelette slowly over low heat to keep it soft and fluffy.
