Preparation method
Preheat the oven to 200–205 °C. Prepare a baking tray and line it with baking paper.
Place the toast bread slices on the baking tray and bake in the preheated oven for 6–7 minutes. Flip the slices halfway through the baking time so that both sides brown evenly.
While the bread is toasting, prepare the cream. In a tall-sided bowl, combine the baby spinach, chives, ricotta, plain yogurt, and olive oil. Season with salt and pepper, then blend with an immersion blender until completely smooth and foamy.
