INGREDIENTS
- 2 cups cooked brown rice
- ½ yellow onion, chopped
- 1 clove garlic, minced
- 1 red bell pepper, diced
- ½ jalapeño, chopped (optional)
- ⅓ cup chopped fresh coriander
- 1 tablespoon olive oil
- 1 ½ cups canned black beans (unsalted), drained
- 1 ½ cups water (or bean cooking liquid)
- salt to taste
- pepper to taste
PREPARATION
- 1Sautéing Aromatics: Heat the oil in a large pan over medium heat. Add the onion and cook until softened (approx. 3 minutes). Add the garlic and cook for another 20 seconds.
- 2Simmering Beans: Pour in the black beans and water (or bean cooking liquid). Increase heat to medium-high and let it gently simmer.
- 3Combining: Gently stir in the cooked rice. Cook for about 2 minutes, until everything is heated through and combined.
- 4Finishing: Just before serving, stir in the coriander, diced bell pepper, and jalapeño. Season with salt and pepper to taste.
