
Porridge with caramelized banana

Ingredients overview
- 100 g fine oatmeal
- 2 teaspoons chia seeds
- 1 teaspoon vanilla extract
- 200 ml skimmed milk
- 100 g banana
- 1 tablespoon honey
- 250 ml still water
Pour the oatmeal into a medium-sized saucepan, add the chia seeds, vanilla extract, milk, and water. Cook over medium heat, stirring occasionally, for 9–10 minutes. Once the porridge thickens, turn off the heat, cover the pot, and let it rest for 2–3 minutes.
Meanwhile, heat a non-stick pan over medium heat. Peel the banana, cut it in half lengthwise, then crosswise (this will give you 4 pieces). Drizzle with honey and cook in the pan for 1–2 minutes until golden brown.
Divide the prepared porridge into two bowls and serve topped with the caramelized banana pieces.
Chef's tip
You can also caramelize the banana in the oven instead of a pan: bake at 215–220 °C for about 8–9 minutes.
