Prepare a bowl and clean the zucchini. Grate it coarsely into the bowl, salt it, then let it sit for 5–8 minutes to release its liquid. Afterwards, thoroughly squeeze out the excess water.
Meanwhile, wash the spinach and set it aside. In a small bowl, beat the 2 eggs with a pinch of salt and pepper.
Cooking and assembly
In a medium-sized pan (at least 20 cm in diameter), heat 1 tablespoon of oil over medium heat. Add the squeezed zucchini and spinach, then sauté for 2–3 minutes until the zucchini loses all its moisture and the spinach leaves wilt.
Chef's tip
You can also serve the wrap with a little Greek yogurt or fresh tomatoes for an even richer taste experience.
