Preparation method
Finely chop the celery stalk. Halve the avocado, remove the pit, and scoop out the flesh. Cut into approximately 0.5 cm cubes.
Halve the hard-boiled eggs, place the yolks in a bowl, and mash them with a fork along with the mustard and lemon juice. Add the mayonnaise and mix until smooth.
Finely chop the egg whites and fold them into the yolk mixture.
Chef's tip
Instead of dicing the avocado, you can mash it roughly with a fork for a different texture. You can even mash half and dice the other half. A few drops of Tabasco sauce will make the spread spicier.
