Preparation method
Preheat the oven to 180–185 °C. Prepare a silicone muffin tin (or a metal tin lined with paper cases) for 6 muffins.
In a large bowl, prepare the mixture. Cut the turkey breast ham, mozzarella, sun-dried tomatoes, and spring onions into small cubes, then place them in the bowl. Add the eggs, dried thyme, salt, and pepper. Mix everything thoroughly with a hand whisk.
Fill the muffin tin cavities with the mixture to about three-quarters full. Place the tin in the hot oven and bake for 30–35 minutes at 180–185 °C, until the muffins rise nicely and turn golden brown.
