Prepare the ingredients: cut the bacon into small cubes, peel and chop the red onion. Halve or quarter the cherry tomatoes. Grate the cheddar cheese, and finely chop the fresh coriander and jalapeño pepper.
Cooking
Heat a pan and cook the bacon until crispy. Whisk the eggs in a bowl, season with salt and pepper. Remove half of the bacon from the pan, then use the remaining fat to cook an omelette from half of the eggs, sprinkling some cheese on top at the end. Repeat the process with the remaining eggs and cheese to get two thinner omelettes. Cut the finished omelettes into strips.
Mix the tomatoes with a little olive oil, red onion, and coriander. Season with salt and pepper. Mix the red beans with the Mexican salsa sauce.
Chef's tip
Serve with fresh avocado or a spoonful of sour cream for an even creamier experience!
