Preparation method

Cut the cooked beetroot into cubes and place in a blender. Add the egg, milk, cane sugar, salt, and 1 teaspoon of vanilla extract. Blend until smooth, then mix in the spelt flour.

Grease a pancake pan with a little oil and heat it up. Fry the pancakes over medium heat (approx. 6 pieces will be made).

For the filling, mix the cottage cheese, sour cream, maple syrup, and the remaining 1 teaspoon of vanilla extract.
