INGREDIENTS
- 1 pc onion
- 2 cloves crushed garlic
- Olive oil
- 2 pcs roasted pepper
- 1 tsp paprika
- 1 tsp ground cumin
- Half tsp chilli powder
- 400 g canned tomatoes
- 1 pinch sugar
- 4 pcs eggs
- Fresh parsley
PREPARATION
- 1Heat a large, lidded pan. Sauté the onion and garlic in 2 tablespoons of olive oil until soft.
- 2Add the peppers, spices, tomatoes, and sugar, then simmer for 10 minutes.
- 3Using the back of a spoon, make four wells in the mixture and crack an egg into each.
- 4Cover and cook slowly until the egg whites are set and the yolks are cooked to your liking. Sprinkle with fresh parsley and serve with bread or toast.
