Preparation method
Preheat the oven to 190 °C and grease a baking dish.
In one bowl, combine the oats, baking powder, cinnamon, and salt. In another bowl, mix the wet ingredients: grated carrots, almond milk, maple syrup, vanilla, and grated ginger.
Pour the wet mixture into the dry ingredients and mix thoroughly. Spread the mixture into the prepared baking dish and smooth it out with the back of a spoon. Press the oats down a bit so they are well submerged in the milk. Sprinkle the top with walnuts and raisins, and gently press them down as well.
