- 120 g almond milk
- 45 g fine-grain oatmeal
- 100 g Greek yogurt or skyr
- 80 g fresh mango
- 40 g freeze-dried mango
- 1 tbsp chia seeds
- 1 tbsp shredded coconut
- 1 tbsp maple syrup
- blueberries for serving
Put all ingredients into a blender and blend until completely smooth and creamy. If it's too thick, add a little more almond milk; if it's too thin, add another tablespoon of oatmeal.
Pour the mixture into bowls or jars and refrigerate overnight (or for at least a few hours). Before serving, garnish with fresh fruit, shredded coconut, chia seeds, or anything you like.
Chef's tip
For an even creamier result, use ripe, soft mango for blending.
