- 400 g brown mushrooms
- 3 tbsp olive oil
- 15 g butter
- 50 g red onion (finely chopped)
- 1 handful fresh parsley (optional)
- 1 tsp dried thyme
- 4 pcs eggs (M-size)
- 50 g Parmesan cheese
- 1 pinch salt
- 1 pinch ground black pepper
Preheat the oven to 185–190 °C and prepare an oven-safe pan.
Cut the mushrooms into larger pieces, about 2 cm. In a pan over medium heat, warm the olive oil and butter. When the oil is hot, add the onion and mushrooms, then sauté for 6–7 minutes. Meanwhile, finely chop the parsley. After sautéing, add the parsley, thyme, salt, and pepper to the mushrooms, mix, then turn off the heat.
Crack the eggs over the mushroom mixture, and sprinkle the entire dish with Parmesan. Place the pan in the preheated oven, and bake for 4–5 minutes at 185–190 °C. Serve immediately.
