Preparation method
Preparing the Batter
Cut the bacon into small cubes and fry it in a pan. In a bowl, whisk one egg with the milk, then add the flour, fried bacon, crushed garlic, baking powder, and a pinch of salt. Mix the batter until smooth.
Preheat the waffle maker and, if necessary, lightly grease it with a little lard. Use about 2 tablespoons of batter per waffle. Cook the waffles for about 10 minutes, until golden brown and crispy.
Preparing the Topping and Serving
Finely chop the red onion and sauté it in the remaining lard. Add the baby spinach, season with salt, and steam until it wilts and softens. Meanwhile, prepare fried eggs from the remaining 4 eggs.
