INGREDIENTS

  • 2 cups cooked brown rice
  • ½ yellow onion, chopped
  • 1 clove garlic, minced
  • 1 red bell pepper, diced
  • ½ jalapeño, chopped (optional)
  • ⅓ cup chopped fresh coriander
  • 1 tablespoon olive oil
  • 1 ½ cups canned black beans (unsalted), drained
  • 1 ½ cups water (or bean cooking liquid)
  • salt to taste
  • pepper to taste

PREPARATION

    Sautéing Aromatics: Heat the oil in a large pan over medium heat. Add the onion and cook until softened (approx. 3 minutes). Add the garlic and cook for another 20 seconds.

    Simmering Beans: Pour in the black beans and water (or bean cooking liquid). Increase heat to medium-high and let it gently simmer.

    Combining: Gently stir in the cooked rice. Cook for about 2 minutes, until everything is heated through and combined.

    Finishing: Just before serving, stir in the coriander, diced bell pepper, and jalapeño. Season with salt and pepper to taste.
