Crispy Sweet Potato Fries with Lime Zest

Preheat the oven to 215–220 °C and line a baking sheet with parchment paper.

Wash and peel the sweet potatoes, then cut them into slices about 2 cm thick, and then cut these into fries 1.5–2 cm wide.

In a bowl, toss the fries with oil, cornstarch, grated lime zest, paprika, salt and pepper to taste, then arrange them on the baking sheet.
