Preparation of the dough
Preheat the oven to 170 °C and line a baking tray of approx. 40x30 cm with baking paper. Place the spinach in a blender, add the oil, milk, and lemon juice, then blend until smooth.
Beat the eggs with the sugar until pale and very frothy (this takes several minutes). Once the egg foam is ready, quickly mix in the spinach mixture. Combine the flour with the baking powder and salt, then gently fold it into the egg mixture with a spatula, using an upward motion.
Pour the dough into the prepared baking tray, spread it evenly, and bake in the preheated oven for approx. 20 minutes, or until the top is lightly golden. Immediately after removing, turn the dough onto a clean kitchen towel. Carefully peel off the baking paper. Roll up the hot dough with the kitchen towel from the shorter side and let it cool completely.
Chef's tip
The taste of spinach is not noticeable in the dough at all; it only gives it a beautiful green color. It is important to thoroughly blend the spinach with the oil and milk.
Use a creamier cottage cheese for the filling to ensure the cream is truly silky.
