INGREDIENTS
- 4 ripe bananas
- 300 g plain flour
- 230 g cane sugar
- 110 g butter + for greasing the pan
- 90 ml milk
- 1 teaspoon baking soda
- 2 eggs
- 1 vanilla bean
- Pinch of salt
- Pastry flour for dusting the pan
PREPARATION
- 1Preheat the oven to 180°C.
- 2In a bowl, mix the flour, baking soda, and salt. Mash the bananas with a fork in another bowl.
- 3Using a stand mixer, cream the butter with the sugar for about 2 minutes. Gradually add the eggs, then mix with the machine for another 2 minutes. After that, add the milk, bananas, vanilla seeds, and mix for 1 more minute. Add the flour mixture in batches and mix the dough until smooth.
- 4Pour the mixture into a buttered and floured pan and bake in the preheated oven for 1 hour. Once baked, remove from the pan and let it cool on a wire rack.
Tip
For baking, you will need a loaf pan approximately 25 cm long, 10 cm wide, and 17 cm high.
