  • 4 ripe bananas
  • 300 g plain flour
  • 230 g cane sugar
  • 110 g butter + for greasing the pan
  • 90 ml milk
  • 1 teaspoon baking soda
  • 2 eggs
  • 1 vanilla bean
  • Pinch of salt
  • Pastry flour for dusting the pan

    Preheat the oven to 180°C.

    In a bowl, mix the flour, baking soda, and salt. Mash the bananas with a fork in another bowl.

    Using a stand mixer, cream the butter with the sugar for about 2 minutes. Gradually add the eggs, then mix with the machine for another 2 minutes. After that, add the milk, bananas, vanilla seeds, and mix for 1 more minute. Add the flour mixture in batches and mix the dough until smooth.

    Pour the mixture into a buttered and floured pan and bake in the preheated oven for 1 hour. Once baked, remove from the pan and let it cool on a wire rack.
Tip
For baking, you will need a loaf pan approximately 25 cm long, 10 cm wide, and 17 cm high.
