Ingredients
- 10 pcs cherry tomatoes
- 4 pcs tortilla
- 2 pcs avocado
- 2 pcs turkey breast
- 2 pcs pickled jalapeño pepper
- 2 pcs garlic
- 8 pcs bacon
- 2 pcs spring onion
- 4 pcs coriander
- 6 pcs olive oil
- 1 pc pepper
- 2 pcs lime juice
- 1 pc salt
Steps
- 1Cut the avocado in half lengthwise. Remove the pit and scoop out the flesh with a spoon, then place it in a bowl. Mash it with a fork.
- 2Finely chop the jalapeño pepper and garlic, and dice the cherry tomatoes. Slice the spring onion into thin rings. Add the other ingredients and mix thoroughly. Then refrigerate and let it rest for 20 minutes.
- 3Preheat the oven to 180°C.
- 4Fry the bacon in a pan until golden brown, then set aside. Cut the avocado in half lengthwise and remove the pit. Finally, scoop out the flesh and slice it.
- 5Season both sides of the meat generously with salt and pepper. Heat the olive oil in a pan over high heat and sear both sides of the meat for 2-2 minutes. Afterwards, transfer it to a baking tray and bake for 12 minutes.
- 6Transfer the cooked meat from the baking tray to a plate and let it cool for 5 minutes. Then slice it into thicker pieces.
- 7Warm the tortilla in a pan over medium heat for a short time (but no more than 20 seconds).
- 8Place one-eighth portion of guacamole, one-quarter portion of meat, one-quarter portion of avocado, one-quarter portion of bacon, one-quarter portion of coriander, and another one-eighth portion of guacamole on one half of the tortilla, then roll it up. Prepare the other tortillas in the same way.
- 9Toast the prepared burrito on both sides for 30-30 seconds, to taste. You can also add grated cheddar cheese. Leftover roasted or cooked turkey from the previous day can also be used for the burrito.
