- 750 ml vegetable broth
- 750 g carrot
- 200 g butter
- 5 g salt
- 10 g sugar
Steps
- 1Peel the carrots and dice them into larger pieces. Place them in a pot with the other ingredients and bring to a boil. Turn off the heat and cook until the carrots soften and the mixture thickens.
- 2Blend the entire mixture thoroughly with an immersion blender and strain it through a fine sieve into a clean bowl.
- 3If necessary, season the puree with salt or thin it with warm vegetable broth.
- 4You can also use water instead of vegetable broth to prepare the carrot puree. You will need an immersion blender and a fine-mesh sieve for preparation. You can also season the carrot puree with a pinch of sugar.
