Ingredients

  • 750 ml vegetable broth
  • 750 g carrot
  • 200 g butter
  • 5 g salt
  • 10 g sugar

    Peel the carrots and dice them into larger pieces. Place them in a pot with the other ingredients and bring to a boil. Turn off the heat and cook until the carrots soften and the mixture thickens.

    Blend the entire mixture thoroughly with an immersion blender and strain it through a fine sieve into a clean bowl.

    If necessary, season the puree with salt or thin it with warm vegetable broth.

    You can also use water instead of vegetable broth to prepare the carrot puree. You will need an immersion blender and a fine-mesh sieve for preparation. You can also season the carrot puree with a pinch of sugar.
