- 200 g butter
- 100 g sugar
- 1 teaspoon grated lemon zest

PREPARATION
- 1Preheat the oven to 170°C.
- 2Mix the ingredients, then knead the dough. Wrap the dough in cling film and place it in the refrigerator to rest for 1 hour.
- 3On a floured surface, roll out the dough to 3 mm thickness. Cut out round shapes from the dough so that the bottom of the Linzer cookies is solid and the top is perforated, then place them on a baking tray lined with baking paper. Place the tray in the preheated oven and bake for 12 minutes.
- 4Once cooled, stick the round shapes together with jam (traditionally, e.g., redcurrant jam). Dust the finished Linzer cookies with powdered sugar.
Tip
Every oven bakes differently, so pay attention to the dough. Linzer dough is thin, so the cut-out Linzer cookies will quickly turn golden brown. You can also use a more spiced jam, as the dough itself is sweet. For preparation, you will need various shaped cookie cutters, baking paper, and cling film.
