- 450 g trout
- 70 g butter
- 1 sprig of rosemary
- 2 sprigs of thyme
- Freshly ground pepper
- Salt

PREPARATION
- 1Preheat the oven to 180°C. Slice the butter.
- 2Cut off the fins with scissors. Wash the fish under cold running water, then gently pat it dry. Season with salt and pepper on all sides, even inside.
- 3Place the herbs and 20 g of butter inside the fish. Lay it on a baking tray lined with baking paper with 20 g of butter. Bake for 15 minutes. Serve the fish immediately, while still warm, with butter on top.
