INGREDIENTS
- 200 g cucumber
- 200 g tomato
- 100 g feta cheese
- 40 g olives
- 15 g peeled red onion
- 50 ml extra virgin olive oil
- 1 red pepper
- Lemon juice
- 3 sprigs oregano
- 1 teaspoon salt
- Freshly ground pepper
PREPARATION
- 1Cut the pepper, remove the core, and cut the flesh into 2 cm wide pieces.
- 2Quarter the cucumber lengthwise, then cut it into 2 cm pieces.
- 3Remove and discard the core of the tomato, then cut the tomato into 2 cm pieces.
- 4Thinly slice the onion. Pick the oregano leaves from the stems and finely chop them. Dice the cheese into 1 cm pieces.
- 5Pour the lemon juice into a bowl, add salt, a pinch of pepper, and the olive oil, then mix. Add the chopped vegetables, olives, cheese, and oregano. Mix well and serve immediately.
