Cut the cleaned vegetables into roughly equal-sized pieces so they cook evenly, then thread them onto grilling skewers or shish kebab sticks.
Mix the olive oil with lemon juice, crushed garlic, chopped fresh herbs (thyme, oregano, basil, parsley to taste), salt, and freshly ground pepper.
Grilling
Brush the skewers thoroughly with the marinade, then grill over medium heat for about 15 minutes until done.
Chef's tip
If using wooden skewers, soak them in cold water for at least 30 minutes before grilling to prevent them from catching fire.
You can also thread other delicacies onto the skewers, such as corn, mushrooms, Brussels sprouts, or even pieces of tofu, tempeh, and halloumi cheese.
