  • 350 ml milk
  • 250 g all-purpose flour
  • 150 g plain yogurt (1 small cup)
  • 6 g baking powder (half a packet)
  • 2 pcs egg
  • 1 tbsp butter (melted)
  • a few drops cooking oil for frying

    Measure the flour into a bowl, add the baking powder, and mix thoroughly with a hand whisk. This action not only combines the ingredients but also aerates the flour, so there's no need to sift it.

    Melt the butter. In another bowl, mix the yogurt, milk, eggs, and melted butter. Pour this liquid mixture into the flour and whisk briefly. Don't worry if there are small lumps; they will disappear completely during baking. Mix only until the flour is fully moistened – avoiding overmixing is good for the dough's texture.

    Heat a large, preferably non-stick pan over medium heat. Once hot, grease it with a little oil. Using a small ladle, spoon dollops of the batter into the pan and flatten them with the back of the spoon into circles about 6-7 cm in diameter. Cook until the batter rises and small bubbles appear on the surface and then pop. Then flip the pancakes and cook the other side until golden brown.

    Continue cooking until all the batter is used up. Serve warm with your favorite jams or compotes from your fridge.
