Break the cauliflower into florets. Cut larger pieces in half or quarters so they are roughly the same size, ensuring even cooking.
In a bowl, mix the oil with the smoked paprika, ground cumin, and salt. Toss the cauliflower florets in the spiced oil and shake thoroughly to ensure every piece is coated with the marinade.
Spread the spiced cauliflower in a single layer on a baking sheet lined with parchment paper or on a grill tray. Roast on a hot grill or in an oven preheated to 200 degrees Celsius for 10-15 minutes, until the cauliflower softens and the edges begin to brown. It's worth flipping it once or twice during cooking.
