
Lamb Leg with Mint Sauce

Preparing the meat
Preheat the oven to 160 °C. Cut the rosemary sprigs into pieces about 2 cm long, and slice the garlic cloves lengthwise into three.
Pierce the lamb leg in several places and stud it with rosemary and garlic. Then brush it with olive oil, and season thoroughly with salt and pepper.
Place the meat on a baking tray lined with baking paper and bake in the oven for about 2 hours, until completely tender.
Chef's tip
The mint sauce is best when the flavors have time to meld, so it's worth preparing it while the meat is baking.
