Preparation method

  • 90 g buckwheat flour
  • 100 g almond flour
  • 1 egg yolk
  • 30 g honey
  • 40 g butter
  • 1/2 teaspoon ground cinnamon
  • 1 pinch of salt

Sprinkle the buckwheat flour and almond flour (ground almonds) onto the work surface. Make a well in the center and add the egg yolk, honey, and cold, diced butter. Knead the ingredients by hand until the dough comes together. Form it into a ball, wrap it in cling film, and let it rest in the refrigerator for 30 minutes.

Preheat the oven to 160 °C (top and bottom heat).

On a floured surface, roll out the dough to about 4 mm thick. Cut out desired shapes and place them on a baking sheet lined with parchment paper. Bake for 8-10 minutes in the middle of the oven until golden brown.

Chef's tip

Use a little buckwheat flour when rolling out the dough to prevent sticking.

You can also decorate the finished cookies with melted dark chocolate or almond flakes.
