INGREDIENTS
- 4 pcs tortilla
- 8 eggs
- 150 g cheese
- 1 avocado
- Fresh spinach leaves
- 1 shallot
PREPARATION
- 1Whisk the eggs and scramble them in a pan with a little salt and pepper. Dice the avocado, chop the wild garlic, and grate the cheese.
- 2Place the tortilla on a cutting board, cut from the center to the edge, as if quartering it.
- 3Mentally divide the tortilla into four sections (half it, then half it again). Each quarter will receive a different ingredient.
- 4The first quarter gets the scrambled eggs, the next the avocado and wild garlic mixture, then the cheese, and finally the spinach leaves.
- 5You can start folding. First, fold the egg section over the avocado section, then fold that over the next section, and repeat once more.
- 6Cook both sides of the folded tortilla until crispy in a pan, contact grill, or toaster.
